Spring salads

 

Favorite salad Wolfgang von Goethe

All fans of the German romantics, this salad will definitely like it. Those who are not familiar with the works of the famous writer and poet, will like it just like that. In the preparation of the same it is simple and very elegant. By the way, Goethe claimed that it was thanks to this salad, he remained cheerful and happy to 84 years.

Take spring herbs: dandelion, nettles, watercress, sour sorrel, borage, parsley, chives and dill. All finely shred, and add 2 boiled chopped eggs. Cover everything with a glass of buttermilk and add salt to taste, pepper and the zest of one lemon.

This is not only useful, but also very vitamin. Who knows, maybe after this lettuce the light will be “the sorrows of young Werther 2”?

Roll “Spring joy”

We buy in the store ready puff pastry. We will need 12 sheets, size 30-40 cm

Now make the filling: in a separate bowl mix 1 tablespoon of corn flour . the same amount of dry sherry and soy sauce and ¼ teaspoon sugar.

2 tablespoons of olive oil heated in a pan, put 225 g of finely chopped NAPA cabbage, some green onion and some chopped mushrooms. All this stew for a minute, stirring. Mix should be tender and crispy. Spread the mixture in a separate bowl.

Again heat the olive oil over high heat. Put 225 g raw prawns and half a teaspoon of grated ginger. Simmer until the prawns become transparent. Pour a little bit of flour and mix until the mixture thickens. Put it in the bowl with vegetables . Bean sprouts and bamboo podsushiwatm on paper towels. Add to vegetables. Cut back a further 125 g of ham.

Now take out of the freezer the dough, roll it and cut crosswise into 3 strips. Put on parchment paper and cover with transparent film.

On each strip put a bit of stuffing and roll it into a loaf. Brush the top with melted butter and refrigerate.

Bake in the oven at 190 degrees for 15 minutes until Golden brown. Serve with warmed soy sauce.

Salad “Spring shrimp”

Cook and peel a pound of shrimp. Shred them into small pieces. Ripe avocado cleaned and cut into neat cubes. Two large grapefruit cleaned from films and disassemble into small pieces. All this stir and season with olive oil, sour cream or mayonnaise to choose from.

Salad is well served with slightly toasted toasted French bread . butter. All serve with a chilled white wine.

Chop the radishes, lettuce, green onions, dill, a couple of boiled eggs. Semicircles cut some large olives. Cucumber cleaned from the skin, carefully cut along and remove seeds. Mix all with fresh sour cream, put them into a bowl and put for some minutes in a cold place.

Salad “Spring Of Beijing”
